Tacos Al Carbon

Ingredients

  • 1 ½ lb. flank steak or sirloin

  • ½ cup fresh lime juice

  • 2 Tbsp red wine vinegar

  • 3 cloves garlic, peeled and smashed

  • 1 Tbsp ground cumin

  • 1 tsp salt

  • 1 tsp pepper

  • 1 jalapeno, seeded and chopped

  • 2 tsp oregano leaf

  • 1 medium onion, minced

  • ¼ cup oil

  • ¼ cup chopped cilantro

  • 16 green onions, cleaned.

  • Tortillas

  • Pico de Gallo

  • Guacamole

Ingredients

  1. Combine lime, vinegar, garlic, cumin, salt, pepper, jalapeno, oregano, onion, cilantro and 2 T of oil in a blender or food processor, blend until smooth.

  2. In a shallow baking dish, pour mixture over flank steak-coat both sides.

  3. Let marinate at room temp for 4 hours, turning a few times.

  4. Preheat grill (charcoal, gas or may be done on stove in hot skillet)

  5. Place meat on grill about 6 inches above coals, grill to medium rare or desired temp, about 12 min.

  6. Transfer meat to tray and cover lightly with foil and let stand for 10 min before carving.  

  7. Meanwhile, brush green onions with remaining oil and grill until browned and wilted, about 3-4 min. Transfer to a serving platter.

  8. Slice flanks very thick across the grain on the bias.

  9. Serve with warm tortillas, pico de gallo and guacamole.
