Garlicky Oven Fries
Ingredients
6 cloves garlic, minced
6 Tbsp veg oil
3 russet potatoes, scrubbed and cut into 12 wedges
2 Tbsp cornstarch
1 ½ tsp salt
¾ tsp pepper
½ tsp garlic powder.
Instructions
Adjust oven rack to lowest position and heat oven to 475˚ F.
Combine garlic and olive oil in a large mixing bowl and microwave until the garlic is fragrant, about 1 minute.
Transfer 5 Tbsp of oil only to a rimmed baking sheet. Coat entire sheet
Add potatoes to bowl and toss to coat. Wrap tightly with plastic wrap and microwave for 3-6 minutes until potatoes are translucent.
Shake bowl halfway through cooking to recoat potatoes
Combine cornstarch, garlic, salt and pepper in a small bowl. Sprinkle over hot potatoes, toss to coat.
Arrange potatoes on a prepared baking sheet in a single layer.
Bake, turning once until deep golden brown and crisp, about 30-40 minutes.
