Feta Bake Dip
Ingredients
4 Tablespoons of Olive Oil
1 lb Cherry tomatoes
4 cloves garlic minced
1 small shallot (or 1 small or green onion thinly sliced)
Pinch of red pepper flakes or pinch to an 1/8 teaspoon Paprika
Sea Salt
Fresh Cracked Pepper
7oz block of Feta cut into 2 slabs
Handful Fresh Basil
Instructions
Preheat oven to 400 F
Place 1 rack in oven to middle and place another rack to the top close to broiler
Pour 2 Tablespoons olive oil into a 8- or 9-inch baking dish (or something similar).
Add the tomatoes, garlic, shallots and paprika.
Sprinkle with pinch of sea salt and pepper to taste. Toss to coat.
Add the Feta and drizzle with remaining Olive Oil. Crack more pepper over top to taste.
Transfer pan to middle rack for 20 minutes,
After the 20 minutes transfer the pan to top rack and switch to your oven's broiler option. Broil on high for 5 minutes, keeping a close eye the entire time.
Once out of the oven smash the feta a sprinkle with fresh basil.
Serve with pita chips, crackers or bread.
