Sweet & Sour Cabbage & Barley Soup

Ingredients

  • 1-2 tsp oil

  • 1 lb stew beef

  • 1 large onion

  • 4 cup water or chicken broth

  • 1 small cabbage, sliced

  • 1 large carrot, sliced

  • 1/3 cup barley

  • 1 bay leaf

  • 1/2 tsp pepper

  • 1/2 tsp salt

  • 1/2 tsp powdered mustard

  • 1/2 tsp poultry seasoning

  • 3 Tbsp brown sugar

  • 3 Tbsp lemon juice

  • 1 Tbsp balsamic vinegar

  • 1 can (32 oz) tomatoes with juice or 8 tomatoes quartered

Instructions

  1. Brown stew meat.

  2. Add the remaining ingredients and bring the mixture to a simmer for 45-60 minutes.

  3. Add more pepper, salt, brown sugar, or lemon juice to your taste.
