Wild Rice Soup

Ingredients

  • 1/2 cup wild rice

  • 1 lb bacon

  • 3 Tbsp bacon drippings

  • 3/4 cup celery, chopped

  • 1 cup onion, chopped

  • 1/3 cup chopped green pepper

  • 2, 14.5 oz cans (ready to serve) chicken broth

  • 4 oz can mushrooms

  • 3, 10.75 oz cans cream of mushroom soup, undiluted

Instructions

  1. Wash wild rice.

  2. Boil rice for 15 minutes and drain. Set aside.

  3. Fry bacon until crisp.

  4. Remove bacon and discard all but 3 Tbsp bacon drippings. Sauté celery, onion, and green pepper in the drippings.

  5. Cook until the onion is transparent.

  6. Put in a large kettle and rice, broth, mushrooms, soup, and dice bacon.

  7. Cook on low heat for 1 hour or more.
