Smoked Meatloaf
Ingredients
Sauté Large green pepper, chopped(opt)
1 large onion, chopped
2 teaspoons olive oil
4 garlic cloves, minced
Mix together in bowl
2 large eggs, lightly beaten
1 cup 2% milk (reduce to 1/4 c cream + 1/4c water)
6 slices bread, cubed
1-1/2 cups shredded cheddar cheese
2 teaspoons salt
1 teaspoon pepper
2 lbs ground beef
2 lbs ground pork
Topping
1-1/2 cups ketchup
1/4 cup packed brown sugar
2 teaspoons apple cider vinegar
Steps
Sauté green pepper and onion in oil in a large skillet until tender.
Add garlic to sauté mixture, and cook 1 minute longer.
Transfer to a large bowl; cool to room temperature.
Preheat smoker to 225°.
Add eggs, milk, bread, cheese, salt and pepper to sauteed vegetables.
Crumble beef and pork over mixture and mix well.
Pat into 9x5 in. loaf pans.
Top with favorite rub.
NOTE: we prefer simple rubs - i.e salt and peppe or Shoups.
Place pans on smoker, uncovered, for 1 hour then remove loaves from pans and continue cooking for another 1 hr and 15 mins.
Combine ketchup, brown sugar and vinegar in a small bowl and set aside.
Increase temp to 375°. Then cook until internal temp reaches 155°, about 30 minutes more.
Remove loaves, then coat entire loaf with ketchup mixture and cook for 15 mins.
