Keto Chocolate Pudding

Ingredients

  • 2 cups heavy cream (1/4 + 1 3/4)

  • 1½ tsp. unflavored gelatin 

  • 1/3 c powdered Erithrytol (Swerve)

  • 1/4 c cocoa powder

  • 1/4 tsp sea salt

  • 2 tsp Vanilla

Steps

  1. Pour 1/4 c heavy cream in bowl and sprinkle with gelatin powder.

  2. In a medium pan over med/low heat, stir together remaining heavy cream, pwd sweetener, cocoa pwd and sea salt. 

  3. Heat while whisking constantly until mixture is smooth and bubbly near edges.

  4. Remove from heat & stir in vanilla then add gelatin and whisk until smooth and dissolved.

  5. Let pudding cool 10 min.

  6. Transfer to another bowl and place plastic wrap over pudding. Whisk again to get any film off top.

  7. Cover again and refrigerate with plastic wrap.

  8. Chill two hours until firm.

  9. Serve with whipped cream.
