Wild Rice Salad

Ingredients

  • 3 cups cooked wild rice

  • ½ cup craisin

  • 1 small can sliced water chestnuts

  • ½ lb fresh mushroom, sliced

  • 2 ribs celery, diced

  • 1 bunch green onion, diced.

  • 1 red pepper, diced fine.

  • 2 Tbsp fresh parsley, chopped.

  • ¼ cup grated carrot

  • ½ cup or more Marzetti’s Raspberry dressing.

  • 2 Tbsp red wine vinegar

Instructions

  1. Combine all salad ingredients.  Mix well

  2. Add dressing until just coated.

  3. Stir in vinegar.

  4. Cover and chill for 1 hour.

  5. Stir before serving.  Add more dressing if needed.
