Potato Kale Soup

Ingredients

  • 1 lb Italian Sausage

  • 1 leek diced (white only) or 1 small onion

  • 4-5 red potatoes diced in larger pieces

  • 1 box and 1 large can of chicken broth

  • 5-6 large kale leaves

  • ¼ to ½ cup butter

  • 2 Tbsp flour

  • 2 packages dry original ranch dressing

  • 1 ¾ cup half and half

Instructions

  1. Brown sausage with the leek or onion.

  2. Boil potatoes in the chicken broth.

  3. Add kale after potatoes are done.

  4. In a saucepan make a white sauce with butter, flour, and ranch dressing.

  5. Add half and half.

  6. Bring to boil and continue boiling for two minutes.

  7. Add to sausage and broth mixture, stirring for 1-2 minutes.

  8. Simmer for 15-20 minutes and turn on low.

  9. Soup can be served immediately or refrigerate after it cools.
