Mike’s Caramels

Ingredients

  • 1 cup butter or margarine

  • 1, 16-ounce package (2½ cups packed) brown sugar

  • 1 cup light corn syrup

  • 1, 14-ounce can (1½ cups) sweetened condensed milk

  • 1 teaspoon vanilla

Instructions

  1. Generously butter a 9x9x2-inch pan; set aside.

  2. In a heavy 3-quart saucepan melt the 1 cup butter or margarine.

  3. Add sugar and dash salt; stir thoroughly.

  4. Stir in corn syrup.

  5. Gradually add condensed milk; stir constantly.

  6. Cook over medium heat, stirring occasionally, to 245° (firm-ball stage), for 15 to 20 minutes (mixture should boil gently over the entire surface).

  7. Remove from heat; stir in vanilla.

  8. Pour into buttered pan.

  9. When cool, cut into squares with a wet, sharp knife.

  10. Wrap each piece in clear plastic wrap. Makes about 2½ pounds
