Italian Chorizo Shakshouka

Ingredients

  • 6-10 eggs

  • 1 cup tomato sauce

  • 1/2 diced onion

  • 1 lb pork sausage

  • 1/2 lb chorizo

  • 1 Tbsp minced garlic

  • Fresh mozzarella, cut into 1/8 inch disks

Instructions

  1. In a cast iron skillet, brown your sausage, chorizo, and onions.

  2. While browning, wisk the eggs in a bowl.

  3. Heat your Ooni pizza oven - allow for 10 mins of preheating time, then reduce heat.

  4. Once browned, add scoops of tomato sauce in the cast iron skillet.

  5. Sprinkle garlic.

  6. Pour scrambled eggs into the cast iron pan.

  7. Place mozzarella disks on top, slightly submerged in the egg.

  8. Place cast iron pan in the Ooni pizza oven.

  9. Rotate the pan every 15 seconds until the egg is fully cooked - should only take 1.5 minutes
