Duke’s Keto Mayonnaise
Ingredients
3/4 cup avocado oil
2 egg yolks (room temperature)
1 egg white
1 Tablespoon white wine vinegar
1 Tablespoon apple cider vinegar
1 Tablespoon fresh squeezed lemon juice
¼ teaspoon Himalayan salt
⅛ teaspoon white pepper
1 teaspoon yellow mustard
¼ teaspoon sweet paprika (not smoked)
Instructions
Add 2 large room temperature egg yolks into the pint Mason jar
Carefully add in the vinegars, lemon juice, salt, mustard, and paprika.
Add in the Avocado oil very slowly, being careful not to disturb the yolks.
Put immersion blender into the bottom of the jar and blend on high until the bottom starts to turn white. Once it does keep immersion blender on and slowly pull immersion blender towards the top or tilt slightly to pull oil down into emulsion.
Slowly pull up and all contents of the jar should turn white. My Duke's mayo is done!
