White Bean Chicken Chili

Ingredients

  • 1 Tbsp olive oil

  • 1 small onion, peeled chopped fine

  • 2 garlic cloves, peeled and chopped

  • 1 medium red bell pepper, chopped fine

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces

  • 3 15 oz can undrained white beans

  • 4 oz canned green chiles, diced

  • ½ tsp cumin

  • 1 tsp chili powder

  • 1 can chicken broth (14.5 oz)

  • 2 Tbsp lime juice

  • 2 Tbsp cilantro

  • 6 Tbsp salsa

  • ½ cup heavy cream

Instructions

  1. In a heavy large pot heat oil, add onion, red pepper, and garlic. Saute for 5 minutes

  2. Push onions to one side and sauté chicken for approximately 5 minutes.

  3. Stir in the white beans, chiles, cumin chili powder, and broth.

  4. Bring to boil and reduce the heat.  Simmer for 10 minutes.

  5. Stir in chicken broth and simmer for 5 minutes.

  6. Stir in lime juice, cilantro, and cream.

  7. Garnish with a tablespoon of salsa if desired.
