Vegetable Beef and Barley Soup

Ingredients

  • Large Onion, chopped

  • 6 cloves Garlic, crushed

  • 1 1/2 cup Celery, chopped

  • 1-2 lb Cubed beef (small)

  • Olive oil

  • 1 quart Chicken Stock

  • 6-7 Cubed Potatoes

  • 2 large cans diced tomatoes

  • 1 1/2 cup Carrots

  • (Other vegetables to taste)

  • 1 cup Barley

  • Bay leaf

  • Salt & pepper

  • Rosemary (opt)

Instructions

  1. Sauté with olive oil the chopped onion, garlic, celery, and cubed beef.

  2. Add chicken stock, cubed potatoes, diced tomatoes, and carrots.

  3. Bring to a light boil then add barley.

  4. Reduce heat after 10-15 mins.

  5. Season with bay leaf, salt and pepper, and rosemary.

  6. Cook on low for 40 mins.
