Vegetable Beef and Barley Soup
Ingredients
Large Onion, chopped
6 cloves Garlic, crushed
1 1/2 cup Celery, chopped
1-2 lb Cubed beef (small)
Olive oil
1 quart Chicken Stock
6-7 Cubed Potatoes
2 large cans diced tomatoes
1 1/2 cup Carrots
(Other vegetables to taste)
1 cup Barley
Bay leaf
Salt & pepper
Rosemary (opt)
Instructions
Sauté with olive oil the chopped onion, garlic, celery, and cubed beef.
Add chicken stock, cubed potatoes, diced tomatoes, and carrots.
Bring to a light boil then add barley.
Reduce heat after 10-15 mins.
Season with bay leaf, salt and pepper, and rosemary.
Cook on low for 40 mins.
