Tomato Basil Bruschetta

Ingredients

  • 8 Roma tomatoes, finely diced

  • 5 cloves garlic, finely minced

  • ½ cup fresh basil leaves, stemmed and chopped.

  • Juice of ½ lemon

  • 2 Tbsp balsamic vinegar

  • ¼ cup extra-virgin olive oil

  • Salt and pepper to taste

  • ½ cup shredded parmesan cheese

  • 1 French baguette, sliced into ½ “ slices

  • 3 Tbsp olive oil

  • 2 tsp salt

  • 1 tsp pepper

  • ½ tsp granulated garlic

  • ½ tsp paprika

  • ½ tsp onion powder

  • ½ tsp dried thyme leaf

Ingredients

  1. Combine tomato, garlic, basil, lemon, vinegar, and oil.  Toss to incorporate.  Season with salt and pepper to taste

  2. Refrigerate until use. At least 15 min.

  3. Stir in Parmesan before use.

  4. Place baguette slices in large plastic bag

  5. Mix together salt, pepper, garlic, paprika, onion powder, and thyme.

  6. Drizzle olive oil on the baguette inside the bag.

  7. Sprinkle seasoning mixture on bread. Twist top of bag allowing a lot of air inside bag (like a pillow)

  8. Shake the bag until all slices of bread are equally covered.

  9. Place crostini on a sheet tray and toast in a 375˚ F oven until crisp and golden brown. 10-13 min

  10. Serve with Tomato Basil mixture
