Pumpkin Praline Cake
Ingredients
3/4 cup brown sugar
1/3 cup butter
3 Tbsp whipping cream
3/4 cup chopped pecans
4 large eggs
1 2/3 cup sugar
1 cup vegetable oil
1 15 oz. can pumpkin
1/4 tsp vanilla
2 cups flour
2 tsp baking powder
2 tsp pumpkin pie spice
1 tsp salt
Instructions
Preheat oven to 350 degrees
Heat brown sugar, 1/3 cup butter, and whipping cream until sugar dissolves. Do not boil.
Add pecans, mix and pour into 2 round cake pans.
Mix eggs, sugar, oil at medium speed.
Add pumpkin and vanilla and mix well.
Add dry ingredients and mix until blended.
Pour into cake pans.
Bake for 25-30 minutes or until done. Can make a day ahead.
Serve with whipped cream.
