Potato Rusks
Ingredients
1 cup butter or butter flavored Crisco
1 cup sugar
1 cup mashed potatoes
2 tsp salt
4 eggs (beaten)
1 cake compressed yeast
2 cup water
8 cup flower
Topping
½ cup butter
1 cup powdered sugar
2 Tbsp flour
Instructions
For the rusks, mix in the order given.
Put in a large greased bowl and cover.
Let stand for several hours.
Roll and cut.
Place in a pan and let rise for two hours.
Bake at 350˚ F for 15 minutes or until golden brown
For the topping, mix together ingredients and spread on rusks before serving.
