Potato Rusks

Ingredients

  • 1 cup butter or butter flavored Crisco

  • 1 cup sugar

  • 1 cup mashed potatoes

  • 2 tsp salt

  • 4 eggs (beaten)

  • 1 cake compressed yeast

  • 2 cup water

  • 8 cup flower

  • Topping

    • ½ cup butter

    • 1 cup powdered sugar

    • 2 Tbsp flour

Instructions

  1. For the rusks, mix in the order given.

  2. Put in a large greased bowl and cover.

  3. Let stand for several hours.

  4. Roll and cut.

  5. Place in a pan and let rise for two hours.

  6. Bake at 350˚ F for 15 minutes or until golden brown

  7. For the topping, mix together ingredients and spread on rusks before serving.
