Chipotle Fish Tacos
Ingredients
1 lb oven-baked fish
1 ½ cup shredded sharp cheese
½ cup corn
¼ cup fresh cilantro
Lime wedges
8 six-inch corn tortillas
Sauce
½ cup plain yogurt
2 Tbsp mayo
2 tsp chipotle peppers in adobe sauce
Instructions
Cook fish in the oven as directed on the package.
While the fish is cooking, create the sauce.
Place yogurt in a paper towel-lined strainer for 20 mins
Then, in a small bowl, combine yogurt, mayo, and peppers.
Heat tortillas on the grill for 1 min on each side.
Flake fish with a fork.
Top each tortilla with 1 Tbsp of chipotle sauce.
Top with fish, cabbage, corn, and cilantro.
Serve with lime wedges
Tips
You can make a large batch of the sauce and store it in the refrigerator. It is great on everything!
