Chipotle Fish Tacos

Ingredients

  • 1 lb oven-baked fish

  • 1 ½ cup shredded sharp cheese

  • ½ cup corn

  • ¼ cup fresh cilantro

  • Lime wedges

  • 8 six-inch corn tortillas 

  • Sauce

    • ½ cup plain yogurt

    • 2 Tbsp mayo

    • 2 tsp chipotle peppers in adobe sauce 

Instructions

  1. Cook fish in the oven as directed on the package.

  2. While the fish is cooking, create the sauce.

  3. Place yogurt in a paper towel-lined strainer for 20 mins

  4. Then, in a small bowl, combine yogurt, mayo, and peppers.

  5. Heat tortillas on the grill for 1 min on each side.

  6. Flake fish with a fork.

  7. Top each tortilla with 1 Tbsp of chipotle sauce.

  8. Top with fish, cabbage, corn, and cilantro.

  9. Serve with lime wedges

Tips

You can make a large batch of the sauce and store it in the refrigerator. It is great on everything!
