Chipotle Fish Tacos
Ingredients
- 1 lb oven-baked fish 
- 1 ½ cup shredded sharp cheese 
- ½ cup corn 
- ¼ cup fresh cilantro 
- Lime wedges 
- 8 six-inch corn tortillas 
- Sauce - ½ cup plain yogurt 
- 2 Tbsp mayo 
- 2 tsp chipotle peppers in adobe sauce 
 
Instructions
- Cook fish in the oven as directed on the package. 
- While the fish is cooking, create the sauce. 
- Place yogurt in a paper towel-lined strainer for 20 mins 
- Then, in a small bowl, combine yogurt, mayo, and peppers. 
- Heat tortillas on the grill for 1 min on each side. 
- Flake fish with a fork. 
- Top each tortilla with 1 Tbsp of chipotle sauce. 
- Top with fish, cabbage, corn, and cilantro. 
- Serve with lime wedges 
Tips
You can make a large batch of the sauce and store it in the refrigerator. It is great on everything!
