Butterscotch Pie
Ingredients:
1 ½ brown sugar
3 Tablespoons flour
1 ½ cup milk
1 ½ teaspoon vanilla
3 egg yolks, beaten
5 butter,
½ teaspoon salt
1 baked 9” pie crust
3 egg whites
Dash of salt
6 Tablespoons sugar
Instructions
Mix sugar, flour and salt in saucepan.
Gradually stir in milk
Add butter
Cook over medium heat, stirring constantly, until mixture thickens and boils
Boil 1 min.
Remove from heat. Gradually stir at least half of mixture into egg yolks.
Then blend into hot mixture in saucepan. Boil 1 min more, stirring constantly.
Remove from heat. Add vanilla
Pour into baked pie shell in 9 in pie pan.
Cool to lukewarm. Top with meringue.
In chilled bowl, beat egg whites and salt in bowl until frothy.
Add sugar gradually beating well after each addition. Beating until rounded peaks are formed and egg whites do not slide when bowl is inverted.
Place egg white mixture on top of filling.
Bake at 400˚ F for 8-10 min until delicately browned.
